A tiny island in the western Pacific, Guam lies about 1600 miles east of Manila and 3800 miles west of Honolulu. The Chamarros are the indigenous people, but the island is home to many Filipinos, Japanese, Koreans, Chinese, and other Micronesian Islanders as well as a substantial number of American military personnel stationed at the U.S. naval base. Chamorro culture centers on crafts (weaving, carving), music, dance, and, of course, food. Native Chamorro cuisine is prepared as it has been for centuries. Kelaguen is made with raw shrimp or thinly sliced beef (or cooked chicken) with chopped scallions, lemon juice, red chiles, and grated coconut, served over red rice. Pancit (rice noodles with chicken, pork, and shrimp topped with shredded cabbage and carrots) and lumpia (fried meat-filled egg rolls) are two Filipino-inspired favorites. And no meal is complete without finadene sauce, a fiery blend of soy sauce, lemon juice, hot peppers, and onions sprinkled liberally over the food.

Roulades with Sauerkraut (Vogelsberger Rolle)

i liked it. i made it for a project in my ProStart class except we used panko, a faux-sauerkraut with cabbage, salt, and rice wine vinegar. i thought pickes would be really strange but it tasted really good in the roll. i would make it again, definately.
