The state capital and one of the points that makes up North Carolina’s Research Triangle, Raleigh is home to a half-dozen colleges including North Carolina State University. This being North Carolina, the rallying cry in Raleigh is for basketball…and barbecue. And not just any barbecue. Pork barbecue is the name of the game. Pulled pork sandwiches are a favorite, topped with a heaping helping of coleslaw. Pork ribs and hush puppies excel here too. On a hot day, nothing goes down better with North Carolina barbecue or a fried chicken dinner than a tall glass of iced tea. If you’re looking for trendy dining in the City of Oaks, the gentrifying Glenwood South neighborhood offers anything from wine bars to sports bars. The enormous State Farmers Market is held daily and shows off the region's bounty, from organic fruits and veggies to fresh-baked cakes and lovingly preserved jams and jellies.

Banana Crumb Muffins

These were good, the first banana nut muffins I've ever made. For the flour half of it was wheat flour and they were great. I also used Canola oil in place of the butter. Will make again. Thanks for the great recipe!

Apple Enchilada Dessert

This was reallllly good, I crave it sometimes. I used a no sugar pie filling adding a little sugar myself, next time I will use fresh apples. I also added some vanila into the sauce, and sprinkled cinnamon every where. It's still really good the next day too. I cut mine into little 2inch pieces and places toothpicks in them, since we had a lot of people. It worked out great. These are delicious!

Spicy Garlic Lime Chicken

I loved this, I also love lime juice though. =) I followed the recipe as is and it was terrific, adding the lime at the last minute is great, really keeps the flavor there. I made a salad out of it the next day, adding a lot of cilantro to it, and spraying with more lime juice. It was still great the day after. Thanks for the great recipe!
