Virginia

Named after Queen Elizabeth I of England, the Virgin Queen, Virginia was the longest settled of the original Thirteen Colonies. In 1607, more than a dozen years before the pilgrims arrived in southern Massachusetts, a fledgling community, known as Jamestown, was established in Virginia. The early going was hard, and the colony was nearly abandoned, but the early Virginians learned to adapt and assimilate native foods into their diet. Corn became a critical food, both in the form of cornbread and grits for the settlers and as fodder for their hogs. Native Americans taught early Virginians to smoke meats. Today, Virginia remains renowned for smoked Smithfield country hams. Other Virginia favorites include such Southern classics as biscuits, grits, and red-eye gravy, and plump Virginia peanuts. The oyster is Virginia’s official state shellfish; the brook trout, its official state fish. And Virginia’s wine industry, Thomas Jefferson would be thrilled to know, has finally caught fire. Virginia’s nickname, the Old Dominion, refers back obscurely to the 17th century, when the colony stood faithful as one of the king’s loyal dominions during the English Civil War.

Delicious Raspberry Oatmeal Cookie Bars

Excellent cookies! I warmed the jam in the microwave in a glass measuring cup so I could just pour it out on top of the filling. Worked perfectly. Next time I'll mix in the oats after cutting in the butter; was a bit strenuous with the oats in it. Otherwise, no complaints and the cookies are delish. Thanks for the recipe!

Good, and easy. I got a lot of interesting comments when I answered the questions about what was in them, but everyone loved them. I had to bake about 15 min each batch; was too gooey inside otherwise. They are a mild, not very sweet cake like cookie. They do not spread much at all. I eliminated the lemon extract from the frosting only bc I had candy cane sprinkles that are peppermint and I didn't want the flavors competing. Thanks for the recipe!

Gingerbread Cupcakes with Cream Cheese Frosting

This cupcake recipe is phenomenal! It baked at 350 for exactly 20 min. and they turned out beautifully. I will be using them at a fundraiser. They were perfectly rounded. I did not use this frosting, but instead used "Decorator Frosting" from this website as another had suggested. I would absolutely suggest that frosting if you are interested in piping on this cupcake. The taste greatly complements this spicy cupcake.
