A mecca of American music, Memphis is the birthplace of the blues, soul, and rock and roll and Elvis Presley himself. Of course, Memphis is also one of America’s great barbecue capitals (where pork has primacy). Be sure to top off your pulled pork sandwich with a mound of saucy slaw. The month-long Memphis in May festival features the renowned World Championship Barbecue Cooking Contest. Besides barbecue, Southern and soul-food classics are on display. Every year during Memphis in May, local Southern restaurants get together in Tom Lee Park to share their fare at the Great Southern Food Festival -- fried catfish or chicken, cornbread, sweet-potato pancakes, fried green tomatoes, and much more. Bring the pants with the larger waistband when you come to town, because you won’t go away hungry in Memphis, Tennessee.

Cha Cha's White Chicken Chili

Not bad! Added garlic salt, doubled the oregano. I think hominy or corn would be a good addition. Will make again. Super easy & quick.

Spaghetti With Peanut Butter Sauce

I used lo mein because I didn't have spaghetti. Likewise, I also used heavy whipped cream out of a spray can, reduced fat peanut butter, and regular soy sauce. Even with all the forced changes, it was still really good. It definitely needed some crushed peanuts, though. Thanks for the easy (and forgiving) recipe!

Shrimp and Catfish Gumbo

Great! It's a real comfort food. We added sausage and substituted cod for catfish. We loaded it with the seafood and meat. Served over rice, there is plenty left over to freeze.
