Dallas, Texas

Ninth largest city in the U.S., Dallas calls to mind big and brash with wide-open spaces anchoring gleaming skyscrapers, luxury hotels, shopping galleries, and art museums. And the food? Sure, you’ll find some of the world’s best chili, barbecue brisket, Tex-Mex, and steaks in Dallas, including regional ingredients like hot chiles, corn, and squash blossoms. But Dallas is an international city where Portuguese, Asian, Middle Eastern, and Latin American cuisines are served in restaurants and in the kitchens of home cooks.

Wilted Lettuce Salad

Reviewed on Nov. 21, 2008 by PAMELA D.
I doubled this except for the lemon and pepper. The dressing was still a bit tart and missing something till I put the crumbled bacon in to heat up in the dressing, then it was just right. Next time I will do half the bacon in the dressing and half as garnish for the crunch.

Chicken Enchilada Soup III

Reviewed on Nov. 21, 2008 by PAMELA D.
This started out a 3 for me but I feel certain that was due to the masa I used, maybe it was off, I know it had been around a while. I had the soup again the next night and the "masa" flavor had mellowed and all other flavors improved greatly. I used a medium enchilada sauce, 4 cloves of garlic and all homemade chicken stock/no water. I will try again with fresh/new masa and will also try with only tortillas to thicken. I also plan to do this with beef stock and use Mijo's Slow Cooker Shredded Beef for a beef enchilada soup.
