I am almost 70 year old lady living in Texas.I was raised in Virginia and Penna.I am Irish decent and love to learn all I can about my Irish and Native American heritage.I have 4 grown children,all married and families of their own.I ahve 13 grandkids, ranging in age 33 down to 13.I ahve 15 great grandkids, ages 2 years up to 14.I love to cook adn especially foods from Ireland.I was born on Saint Patrick's Day and love all the things this day holds and the history of both Ireland and Native American.

Chewy Peanut Butter Brownies

I made these on a Saturday and my husband and 2 year old daughter gobbled up the whole batch before I even got a piece. My husband who dosen't really eat sweets told me these were a keeper. I added some chocolate chips but kept everything else the same.

Mexican Posole Stew

Excellent posole! Like the other reviewers, I didn't know what kind of chilies would work so I used what I had -- dried Guajillo peppers. I bought a bag of them at the grocery store and they've worked wonderfully for many recipes. I have used 6 and it worked -- just make sure that you remove the seeds because they stay "crunchy" and HOT in this recipe. Also, try to use "Mexican oregano" if you can find it. I am going to add a small tin of green chilies next time I make this for extra zing.

Black Bean and Corn Quesadillas

Wow, these are so tasty and easy! And cheap! It doesn't get better than that. Even my husband (a serious meat eater who grumbles every time we have a meatless meal) really enjoyed them. I added some cumin and fresh garlic and it was perfect. I think in the future I would cook them in the oven, as others have suggested, because they're kind of hard to make on the stove without making a mess. Will definitely make again!
